Unless you have completely destroyed it, I would say keep the majority of it together while in transit so you can continue the project at your new home. As far as Open House goes, If I were to have one, all of My LEGO would be on display, people are always amazed at the displays I have and I would just take a two weeks to dismantel every set I have.
3 things - first of all, I have destroyed it. 2nd of all, I want to do something kiwi before I leave NZ - I have less time than you think. 3rd of all, it'd get destroyed in the shift, so that was never an option.
