There are a lot of people on this site with advanced degrees; engineers, physicians, architects, you name it! Plus, you're already pretty invested, from the looks of your stash!

As De Tomaso says, try and educate your Mom to foster your creativity by bunging it all in a large pile so you can build something big (you can always use Bricklink inventories to sort them back later). Failing that, grab a favourite set and build alternatives with it. Whatever you do, have fun!

How are you supposed to be more creative if all your Lego is tied up in sets? You could build something incredible with all that Lego. But if she really means you must keep them together then, you had better do as she says as Mum is the Boss ;-) In regards to Jess the CatCar, I don't make instructions i'm affraid but you are welcome to try and recreate anything I build, I'm glad it gives people inspiration. I'd like to see you break up a few of those sets and build a large project. You can always ask me if you need any ideas. This is how you'll get more popular as a builder. Larger models that take time and effort to build :-) Now less chat and more dismantleing/building!
